Features:  Paddlefish or Spoonbill roe is harvested from the Paddlefish, one of the native North American relatives of the Sturgeon family. It is listed as one of the biggest river fishes of North America and its native area is the Mississippi River basin. Technically their eggs are roe and not a caviar, because it is not a direct descendent of the sturgeon species.
